At 13 years old, Hieu was living opposite a bakery in Saigon where he passionately learned the trade. By 14 years old, the Luong family were escaping the Vietnam War to an Indonesian refugee camp.
While there, Hieu started his first bakery: A hand-built wood fire oven with a tinned roof that produced the most sought-after bread on the island.
In 1987, Hieu met Madeleine while studying IT together at university. After graduating, Hieu’s first day on the job at Westpac was interrupted by a stale lunchtime sandwich.
